Cooking yes, baking no. The difference between cooking and baking and why I get it so very wrong – you need to follow a very precise to the gram measurements, and I like to free style.
There has been many a time when I have made a sunken cake, a crispy pavlova, and overflowed muffins.
Just ask anyone who has the pleasure of chewing and swallowing a big bite of my mistakes, with a big gulp of tea to chase it down. Oh yes, the mistakes have still be placed on the cake table, to the misfortune of others.
Do you remember the story I told you about my very first dinner party. I was entertaining a chef, and everything went pear shaped very quickly. Especially the cake.
I went to the shops specifically to get self raising flour to make a beautiful and simple apple tea cake. But my thrifty nanna inner voice told me to use what was already open – the plain flour!
Well, all I need to say is that the cake was more of a pancake. Because we were friends, and Scott is just such a gracious person, he told me everything was lovely (meanwhile I was dying inside).
Lesson learnt. I now follow the recipe to the gram. However I can still very easily muck up a simple chocolate cake.

I love it because, it uses simple pantry ingredients, you don’t even need milk or eggs. Hands up who has gone to bake a cake only to find that they are out of these two essential ingredients. ME!

Simplicity Chocolate Cake
1 ½ cup flour
3 tbsp cocoa
1 cup sugar
½ tsp salt
1 tsp baking powder
1 tsp vinegar
1 tsp vanilla
5 tbsp salad oil
1 cup cold water
1. Preheat the oven on 180°C.
2. In a mixing bowl combine the flour, cocoa, sugar, salt and baking powder.
3. With spoon make three holes in mixture. Put the vanilla in one hole, the oil in another and the vinegar in the third hole. Pour the water over the oil.
4. Combine thoroughly with the spoon, epically corners and sides.
5. Bake for 30 minutes or until cooked when tested with a skewer.
